Job Objective & Summary
The Pool Bartender is responsible for preparing drink orders for all guests by following company standards and recipes. The bartender will also be responsible for providing food, non-alcoholic and alcoholic beverage orders to guests, by following company steps of service standards. It is the responsibility of the position to maintain the pool bar area and to create an environment that is warm and welcoming in order to provide excellent service to our guests.
Essential Functions
  • Make drinks/pour beer and wine following specific company standard recipes. Issue, open and serve wine/champagne bottles. Maintain complete knowledge of all drink recipes.
  • Take orders, up sell food and beverage items, run food to guests, refill drinks in a timely manner, table maintenance and the ability to properly ring up and close out a guest check with the proper method of payment.
  • Communicate orders, questions and service needs with the servers, bar attendants and kitchen staff.
  • Complete daily opening, closing and/or running side work. Maintain cleanliness of work areas, equipment, dining/service areas, and storage areas.
  • Communicate and understand guest's service needs. Check in with and anticipate the guest's service needs. Maintain positive guest relations. Follow company standard guest greetings, goodbyes, steps of service and problem solving.
  • Responsible for keeping daily cash bank secure, completing cashier reports, processing payments and properly closing out all checks.
  • Maintain complete knowledge of all menu items, liquor brands, beer and wine selection and non-alcoholic drinks available. Including descriptions, plating and garnish standards etc.
  • Maintain complete knowledge of table/seat/section numbers, proper table set ups, hours of operation, dress code and other standard operational information.
  • Utilize the MICROS computer system, to input information/orders and close out checks.
  • Adhere to all cash handling and credit policies and procedures.
  • Provide legible communication and compute basic math calculations.
  • Place daily orders for supplies based on order forms, par and inventory levels. Pick up, put away and stock all products in a neat and tidy manner abiding by proper first in, first out rotation.
  • Polish glassware, silverware, maintain a clean and tidy bar top and dining area. Clear away dirty plates and glassware in a timely fashion.
  • Prevent guest intoxication while providing them with alcoholic beverages.
  • Ability to exercise good judgment in handling disgruntled and or inebriated guests.
  • Ability to exert physical effort; carrying up to 35lbs comfortably, lifting up to 50lbs occasionally, and endure physical movement such as bending and lifting according to safety standards and standing for long periods of time indoors and out.
  • Must be able to work outside exposed to direct sunlight for the duration of the shift.
  • Maintain and comply with all company policies and procedures.
  • Work with the team to carry heavy items and maintain a hazard free work environment: clean spillage right away, properly clean up broken glass, etc.
  • Follow all company and safety and security policies and procedures; report accidents, injuries and unsafe work conditions to manager, complete safety training and certifications, maintain company confidentiality.
  • Use all chemicals in accordance with OSHA regulations and hotel requirements.
  • Any other reasonable task as requested by supervisors.
Qualification Standards
  • 2-3 years of experience as a bartender required.
  • Must have extensive knowledge of liquors, wines, and beers. Must have knowledge of all popular drinks and shots, brand selections, prices and garnishes.
  • Previous hotel experience is preferred; experience in a luxury lifestyle hotel is highly desirable.
  • Minimum of 18 years of age to serve alcoholic beverages.
  • Must possess a high school diploma or equivalent; college graduate is preferred.
  • Must have extensive knowledge of liquor, wines, beers and garnishes.
  • Experience with a point of sales system required. Micros experience highly desirable.
  • CPR/First Aid certification is desirable.
  • Must possess (or be able to obtain) a valid State of Hawaii Liquor Commission card.
  • Must possess (or be able to obtain) Hawaii Dept. of Health Tuberculosis Clearance Certification.
  • Must possess a good command of the English language and have the ability to clearly and pleasantly communicate with guests and team members both in person and by telephone.
  • Ability to speak a second language is preferred.
  • Must have the ability to exercise common sense and good judgment; work with others as part of a team; perform job functions with minimal supervision.
